With ¹³C-NMR analysis, we determine the distribution of saturated, monounsaturated, and various polyunsaturated fatty acids at the sn-1,3 and sn-2 positions of the glycerol backbone – a decisive feature for distinguishing natural from industrially modified fats.
Additionally, the method enables detailed determination of mono-, di-, and triglycerides (MAG, DAG, TAG) for comprehensive structural characterization of fats and oils.
